For the dough: Mix the flour with the salt. Rub the yeast with a teaspoon of sugar until it liquefies. Melt the butter and the rest of the sugar in the warm milk. Mix all the ingredients and knead an elastic and non-sticky dough, then cover and leave to rise until we prepare the filling.
For the filling: we soak the raisins in hot water. Mix the eggs with the sugar and the vanilla Bourbon sugar, then add one spoon of cheese, sour cream and semolina one at a time and mix well after each one. At the end, add the lemon peel and the well-squeezed raisins. Set aside until the crumble is ready.
For crumble: mix the sugar with the cinnamon, add the flour, mix, then add the cold butter. Mix with your hands until you get a crumbly dough.
Preheat the oven to 200 degrees. Wallpaper a large stove tray with baking paper. Spread the dough in a sheet the size of a tray, mine was approx. half a cm thick.

After the dough has risen, grease the table with oil and spread a piece of dough as thin as possible and a little bigger than the baking form, then put the dough sheet in a round baking form (the baking form is greased with butter and then cover with baking foil) with the edges next to the walls of the form upwards, then put the prepared filling, then make some more balls of dough and put over the filling, on the edges, the wheel around, then make a cross shape in the middle also from dough balls.
Leave to rise again until the composition slightly exceeds the shape. Place in the oven and leave on the right heat.
Bake for about 45 minutes in the oven. Remove from the oven and grease with honey, I also powdered a little sugar, for even more appearance. Leave to cool a bit, then cut and serve.

Easter recipe without dough with cheese and raisins
Ingredients (for a round tray with a diameter of 20 centimeters):
- 600 grams of well-drained very fatty sweet cottage cheese
- 4 eggs
- 4 tablespoons sugar
- 1 teaspoon of cinnamon
- grated peel of half a lemon
- peeled from half an orange
- 1 pinch of salt
- 100 grams of raisins soaked in a little milk with rum essence
- butter and breadcrumbs (to grease and wallpaper the baking tray)
Method of preparation:
First of all, preheat the oven to 180 degrees Celsius. Then we take care of Easter: mix the cheese well with the sugar, add the eggs, lemon and orange peel, raisins and cinnamon and mix until the composition is homogenous with a wooden spoon.
Then grease the round tray with a little butter and line the bottom with breadcrumbs (but you can skip this step if the tray is non-stick), then add the cheese mixture.
Leave in the oven at 180 degrees for 40 minutes until golden.
Allow to cool, then place on a plate and garnish with powdered sugar.
Advice: Before you get to work, be sure to drain the cottage cheese well so that it is compact.
