Bruschetta with Kalamata Olives, Braised Greens, and Ricotta

Ingredients

  • 10 ounces broccoli rabe (rapini); stems cut into 1/2- to 3/4-inch pieces, leaves coarsely chopped (6 to 7 cups)
  • 4 tablespoons extra-virgin olive oil, divided
  • 5 garlic cloves, minced, divided
  • 1/8 teaspoon (generous) dried crushed red pepper
  • 12 1/3-inch-thick diagonal baguette slices
  • 1 cup whole-milk ricotta cheese
  • 1 tablespoon fresh oregano leaves
  • 25 Kalamata olives, pitted, halved

Recipe Preparation

  • Cook broccoli rabe in boiling salted water until tender, 5 to 6 minutes. Drain well. Heat 2 tablespoons oil in large skillet over medium heat. Add 3 minced garlic cloves; stir 1 minute. Add broccoli rabe and red pepper; sprinkle with salt. Cook 2 minutes. Cool. DO AHEAD Can be made 1 day ahead. Cover; chill. Bring to room temperature before serving.

  • Preheat oven to 375°F. Place baguette slices on rimmed baking sheet. Drizzle with 2 tablespoons oil. Bake until golden, about 10 minutes. Turn bread over; bake until golden, about 10 minutes longer. Sprinkle remaining 2 minced garlic cloves over.

  • Sprinkle baguette slices lightly with salt. Spread ricotta on baguette slices; top with broccoli rabe. Top with oregano leaves and olives.

5 Ways Bruschetta

Crostini [krô’stēnē] means “little toasts” in Italian, or small, thin slices of toasted bread. They’re the anchor of the versatile appetizer we call bruschetta, providing the perfect vessels for crunchy flavorful bites.

To prepare crostini: Cut 1 (10.5 ounce) French baguette loaf on a bias into 3/4-inch-thick slices brush both sides with 2-1/2 tablespoons olive oil. Grill slices on medium-high 1-1/2 minutes per side or until grill marks appear rub top sides of bread slices with 1 garlic clove. Crostini can be prepared up to 2 days in advance. Cool completely, then place in a large zip-top plastic bag seal bag, pressing out excess air. Store crostini at room temperature.

1. Grilled Provençal
Slice 1 small eggplant (about 1 pound), 2 medium tomatoes and 1 small onion into 1-inch-thick slices brush both sides with 3 tablespoons olive oil and sprinkle with 3/4 teaspoon salt and 1 teaspoon cracked black pepper. Grill vegetables, covered, on medium-high heat 10 minutes, turning once halfway through cooking.

Chop vegetables into 1-inch pieces toss with 1/4 cup red wine vinegar, 2 tablespoons chopped kalamata olives, 1 tablespoon olive oil and 1-1/2 teaspoons anchovy paste. Makes about 3 cups.

Top each crostini with about 2 heaping tablespoons eggplant mixture evenly sprinkle with 2 tablespoons chopped fresh parsley leaves and 1/4 cup toasted pine nuts.

2. Grilled Tuna, Caper & Red Onion
Place 2 (8-ounce) tuna steaks and 1/2 cup olive oil in large zip-top plastic bag refrigerate at least 1 hour or up to 1 day. (This helps keep the fish moist.)

Whisk together 2 tablespoons fresh lemon juice, 2 teaspoons Dijon mustard, 3/4 teaspoon pure honey and 1/8 teaspoon salt whisking constantly, slowly drizzle in 1/4 cup extra virgin olive oil until emulsified. Toss 1/4 cup drained capers and 2 tablespoons finely chopped red onion with all but 2 tablespoons lemon juice mixture.

Remove tuna from marinade discard marinade. Brush both sides of tuna with remaining lemon juice mixture sprinkle with 1/4 teaspoon salt and 1/8 teaspoon cracked black pepper. Grill tuna, covered, on high 6 minutes or until internal temperature reaches 145°, turning once halfway through cooking. Flake tuna with fork toss with caper mixture. Makes about 3 cups.

Top each crostini with about 2 heaping tablespoons tuna mixture evenly sprinkle with 2 tablespoons chopped chives.

3. Ricotta Caprese
Stir 1-1/2 cups whole-milk ricotta cheese, 1/4 teaspoon salt and 1/8 teaspoon pepper gradually stir in 1 tablespoon extra virgin olive oil.

Toss 2 cups quartered red and/or yellow cherry tomatoes, 2 tablespoons extra virgin olive oil, 1 tablespoon minced shallot, 1 tablespoon red wine vinegar, 1 minced garlic clove, 1/4 teaspoon salt and 1/8 teaspoon ground black pepper. Makes about 2 cups.

Spread each crostini with about 1 tablespoon ricotta mixture evenly top with tomato mixture and sprinkle with 1/4 cup fresh basil leaves.

4. Black Bean, Arugula & Queso Fresco
Toss 1 (15-ounce) can drained and rinsed black beans, 4 cups loosely packed arugula, 3 tablespoons extra virgin olive oil, 1 tablespoon fresh lime juice, 1 minced garlic clove, 1 teaspoon ground coriander, 3/4 teaspoon salt and 1/4 teaspoon ground black pepper. Makes about 4 cups.

Top each crostini with about 3 tablespoons bean mixture evenly sprinkle with 1-1/2 cups crumbled queso fresco or chèvre and 1/4 cup toasted pepitas.

5. Grilled Asparagus, Red Pepper & Prosciutto
Toss 1 bunch asparagus (ends trimmed) with 2 tablespoons olive oil grill asparagus, covered, on medium-high heat 8 minutes or just until tender, turning once halfway through cooking.

Chop asparagus into 1-inch pieces toss with 1-1/4 cups chopped, drained roasted red peppers, 3 tablespoons red wine vinegar, 1 minced garlic clove, 1/4 teaspoon salt and 1/8 teaspoon cracked black pepper. Makes about 2-1/4 cups.

Top each crostini with about 2 tablespoons asparagus mixture evenly top with 1/2 cup shaved Parmesan cheese and 3 ounces shaved prosciutto.

From time to time, I have been posting recipes on Instagram that I haven’t previously posted here. They are generally a result of something I found at the Farm Stand or for singular ingredient that I happen to have on hand.

If you are not following me on Instagram (why not. ), then you wouldn’t have seen these recipes. Even for those following me there, I fear having recipes in too many places makes it harder for you to find something that I have published.

So, with that in mind, I am creating this Quick Hits – Recipes from Instagram Page. Once a recipe has been published on IG, I will also make a copy of it here.

These recipes won’t be accompanied by a full blown blog post. They will often have comments or notes, but not a full post.

Bruschetta with Olives and Capers

July 31, 2020 Here is a quick appetizer or light lunch to try. It comes together in about 10 minutes. You can scale the recipe easily for a larger group. Feel free to play with this recipe and change things out. ⁠

A couple of notes:⁠
I add the onions after the olives have been pulsed in the food processor. I think that the food processor would over process the onions. The result would be very strong onions that would dominate.⁠

Use any pesto that you have as a spread, but this is a great use for the Beet Green Pesto I posted earlier.⁠

Bread slices can be as large or small as you want depending on what you are using the Bruschetta for. Small baguette rounds are great for a party appetizer. Larger slices make a nice light lunch. ⁠

Bruschetta with Kalamata Olives, Braised Greens, and Ricotta - Recipes


To prepare crostini: Cut 1 (10.5 ounce) French baguette loaf on a bias into 3/4-inch-thick slices brush both sides with 2-1/2 tablespoons olive oil. Grill slices on medium-high 1-1/2 minutes per side or until grill marks appear rub top sides of bread slices with 1 garlic clove. Crostini can be prepared up to 2 days in advance. Cool completely, then place in a large zip-tight plastic bag seal bag, pressing out excess air. Store crostini at room temperature.


1. Grilled Provençal
Slice 1 small eggplant (about 1 pound), 2 medium tomatoes and 1 small onion into 1-inch-thick slices brush both sides with 3 tablespoons olive oil and sprinkle with 3/4 teaspoon salt and 1 teaspoon cracked black pepper. Grill vegetables, covered, on medium-high 10 minutes, turning once halfway through cooking.

Chop vegetables into 1-inch pieces toss with 1/4 cup red wine vinegar, 2 tablespoons chopped kalamata olives, 1 tablespoon olive oil and 1-1/2 teaspoons anchovy paste. Makes about 3 cups.

Top each crostini with about 2 heaping tablespoons eggplant mixture evenly sprinkle with 2 tablespoons chopped fresh parsley leaves and ¼ cup toasted pine nuts.

2. Grilled Tuna, Caper & Red Onion
Place 2 (8-ounce) tuna steaks and 1/2 cup olive oil in large zip-top plastic bag refrigerate at least 1 hour or up to 1 day. (This helps keep the fish moist.)

Whisk together 2 tablespoons fresh lemon juice, 2 teaspoons Schnucks Dijon mustard, 3/4 teaspoon Schnucks pure honey and 1/8 teaspoon salt whisking constantly, slowly drizzle in 1/4 cup Full Circle Organic extra virgin olive oil until emulsified. Toss 1/4 cup drained capers and 2 tablespoons finely chopped red onion with all but 2 tablespoons lemon juice mixture.

Remove tuna from marinade discard marinade. Brush both sides of tuna with remaining lemon juice mixture sprinkle with 1/4 teaspoon salt and 1/8 teaspoon cracked black pepper. Grill tuna, covered, on high 6 minutes or until internal temperature reaches 145°F, turning once halfway through cooking. Flake tuna with fork toss with caper mixture. Makes about 3 cups.

Top each crostini with about 2 heaping tablespoons tuna mixture evenly sprinkle with 2 tablespoons chopped chives.

3. Ricotta Caprese
Stir 1-1/2 cups whole-milk ricotta cheese, 1/4 teaspoon salt and 1/8 teaspoon pepper gradually stir in 1 tablespoon Full Circle Organic extra virgin olive oil.

Toss 2 cups quartered red and/or yellow cherry tomatoes, 2 tablespoons Full Circle Organic extra virgin olive oil, 1 tablespoon minced shallot, 1 tablespoon red wine vinegar, 1 minced garlic clove, 1/4 teaspoon salt and 1/8 teaspoon ground black pepper. Makes about 2 cups.

Spread each crostini with about 1 tablespoon ricotta mixture evenly top with tomato mixture and sprinkle with 1/4 cup fresh basil leaves.

4. Black Bean, Arugula & Queso Fresco
Toss 1 (15-ounce) can drained and rinsed black beans, 4 cups loosely packed arugula, 3 tablespoons Full Circle Organic extra virgin olive oil, 1 tablespoon fresh lime juice, 1 minced garlic clove, 1 teaspoon ground coriander, 3/4 teaspoon salt and 1/4 teaspoon ground black pepper. Makes about 4 cups.

Top each crostini with about 3 tablespoons bean mixture evenly sprinkle with 1-1/2 cups crumbled queso fresco or chèvre and 1/4 cup toasted pepitas.

5. Grilled Asparagus, Red Pepper & Prosciutto
Toss 1 bunch asparagus (ends trimmed) with 2 tablespoons olive oil grill asparagus, covered, on medium-high 8 minutes or just until tender, turning once halfway through cooking.

Chop asparagus into 1-inch pieces toss with 1-1/4 cups chopped, drained roasted red peppers, 3 tablespoons red wine vinegar, 1 minced garlic clove, 1/4 teaspoon salt and 1/8 teaspoon cracked black pepper. Makes about 2-1/4 cups.

Top each crostini with about 2 tablespoons asparagus mixture evenly top with 1/2 cup shaved Parmesan cheese and 3 ounces shaved prosciutto.


Grilled Chicken Bruschetta

Bruschetta Topping

Start by dicing the tomatoes and onion and add to a medium bowl.

Next, mince the garlic and basil. Then add to the bowl.

Finally, add the olive oil, balsamic vinegar, salt and pepper.

Fold together and then let sit while you grill the chicken.

Once the topping is prepped, cube the mozzarella and set aside. If you add the mozzarella in at this point, it will get mushy. However, you want it prepped now so that you can assemble quickly while the chicken is hot.

Preparing the Chicken

Begin prepping the chicken by slicing the chicken breasts into thin cutlets. If you are lucky, your grocery stores will sell the chicken breasts pre-sliced into thin cutlets. Perdue sells pre-packaged thin chicken breasts on the east coast. Not sure about the rest of the country.

After the chicken is sliced into cutlets, cut the cutlets in half to make smaller pieces, similar in size to traditional bruschetta bread.

Before grilling, season the chicken with salt, pepper and garlic powder.

Grill the chicken over high heat for about 2-3 minutes per side or until the chicken reaches an internal temperature of 165 degrees Fahrenheit. Final Assembly

Before assembling the chicken bruschetta, fold the mozzarella into the tomato mixture.

To assemble, top each piece of the grilled chicken with a few spoonfuls of the tomato mixture.
