Ingredients and quantities:

1 can with white beans, natural (500 g)
200 grams of green beans
6 small white onions

250 grams of smoked mackerel fillets
5 tablespoons olive oil
2 tablespoons wine vinegar
100 grams of coconut flakes
salt, freshly ground pepper

Method of preparation:

  1. Drain the beans in a colander. Cut the tails and remove the green bean splinters, then boil it for about 12 minutes in a large pot of boiling water, in which you put a pinch of salt. Then drain the beans, pass it through a stream of cold water and let it drain again.
    2. Peel the white onions and cut them thinly, lengthwise. Cut the celery tail into small pieces. In a salad bowl, combine green beans, coconut, thinly sliced ​​white onions and celery. Mix everything carefully.
    3. Prepare the sauce: put in a bowl the olive oil, the wine vinegar, a pinch of salt and a pinch of ground pepper. Homogenize, pour the composition over the vegetables, in a salad bowl, and mix gently. Unwrap strips of smoked mackerel fillet, place them in the center of the salad and serve.

Ingredient:

  • 7 boiled eggs, 200 gr boiled potatoes
  • 100 gr apples, 100 gr cheese
  • 4 cucumbers with vinegar, 50 gr pressed ham
  • Salt, sugar, vinegar and oil to taste

Method of preparation:

Cut into cubes 5 boiled eggs, potatoes, apples, 2 cucumbers with vinegar, cheese and pressed ham. Put them in a bowl, add salt, sugar, oil and a little vinegar. We mix.

Put the salad in a deep bowl and decorate it with egg slices and pickles.

Egg salad with herbs

Ingredient:

  • 8 boiled eggs, 2 cucumbers in vinegar
  • A handful of green onions, 1 bunch of dill
  • 250 gr Greek yogurt, 200 gr thick cream
  • 1 teaspoon mustard, 1 tablespoon white wine vinegar
  • Salt, pepper and a few sprigs of dill

Method of preparation:

Cut the cucumbers into vinegar into small cubes. Wash the green onions and dill, let them dry and then cut them into small pieces.

Mix the cream with the yogurt, mustard and vinegar. Season the mixture with salt and pepper and then add the cucumbers, green onions and dill.

Peel the eggs and cut them into thin circles, then add them to the salad. We put the egg salad in the plates and decorate it with dill sprigs.


Egg salad with mushrooms

Wipe the mushrooms with a damp cloth and cut into smaller cubes. Put in a pan and sprinkle with a little salt. Cover with a lid and light the fire. In a few minutes the mushrooms will leave water. Leave the pan without the lid until the liquid evaporates, then add the oil. All it takes is 1 tablespoon to wrap the mushrooms a little. They are kept on the fire for a while, mixing them, just enough to take on a little color. Set the pan aside, without a lid, until the mushrooms have cooled.

Meanwhile, boil the eggs hard, about 7-8 minutes from the time of boiling. Leave in cold water for about 10 minutes, then clean and cut into cubes.

Finely chop the onion and add it over the eggs. The chilled mushrooms are also added. In a bowl, mix the mayonnaise, cream and mustard, and season the salad with the sauce obtained. It is suitable for salt and pepper and can be served immediately, but it lasts until the next day.
