  • 125ml chicken stock
  • 1 bay leaf
  • 1.5 kg skinless chicken pieces (e.g. breasts, thighs, legs)
  • 500g fresh spinach, diced
  • 125ml yoghurt

  1. Preheat the slow cooker to High.
  2. Heat oil in a deep frying pan over medium heat. Add onion and cook until softened and golden in colour. Add garlic, ginger, chilli, turmeric, cumin seeds, salt and pepper, coriander and cinnamon stick. Stir well. Add tomatoes, stock and bay leaf and bring to the boil.
  3. Place the chicken in the slow cooker and pour in the sauce. Cover and cook on Low for 5-6 hours or High for 2 to 3 hours or until chicken is cooked through and no longer pink in the centre.
  4. Stir in the spinach and yoghurt; cook for 20 more minutes on High.

Talk about comfort food! The flavor of the sauce was so delicious. I am a big fan of tomatoes and I am a big fan of cream cheese so the two of them together was a match made in heaven. I loved using chicken thighs for this recipe. The reason? They stay so moist and tender and have so much flavor. After they are slow cooked they break apart really easily with a fork. I know many of you will want to use chicken breasts and that is okay. They won’t be as tender and succulent.

This recipe might be a fit for your low carb diet. The two ingredients that have carbs are the tomatoes and cornstarch. You can easily leave out the cornstarch and thicken with a keto-friendly thickener. As far as the tomatoes go, I wouldn’t leave them out because I am a huge fan and they add to the taste of the entire dish. However, if you must, you can leave them out and have a creamy white sauce with chicken.

Every time I've tried to pressure cook this Chicken Saag in the Instant Pot, the yogurt separates and curdles and you get a greasy layer and clumps. Not very appetizing.

I know I can add the yogurt later, but I can taste the difference between yogurt added later, vs. things cooked in yogurt, which now has spices and flavor infused into it. So I wanted to come up with a way to make this work at high pressure in the Instant Pot.

Typically when we cook with yogurt in India it's not unusual for us to put in a little chickpea flour into the yogurt, or add a little flour.


Slow-Cooker Palak (Spinach Curry)

Put all ingredients except salt and butter into a 3-5 qt slow cooker. Add 1/2 c. of water (or skim milk for a creamier result--be sure to recalc the nutritional info if you use milk). Cook on slow cooker's "high" setting for 3 hours. Don't worry if the slow cooker looks crowded at first. The spinach will cook down to a manageable volume pretty quickly. About once an hour, give the mixture a stir (if possible).

After 3 hours, stir the mixture well and then puree it with a stick/immersion blender. If you don't have one you can remove the mixture to a stand blender or food processor and buzz it there, but it's a LOT easier with a stick blender. Add the salt and butter and cook on the slow cooker's LOW setting for another 2 hours. This second simmer is important. Don't skip it, even though the stuff looks ready after you blend it.

Cooked chicken, lamb, chickpeas, or cubed fresh cheese can be added to make one of the numerous "Spinach and ***" curries which are so delicious.


  • 800g Coles RSPCA Approved Australian Chicken Thigh Cutlets
  • 1 tbs vegetable oil
  • 1/2 cup (100g) dried chickpeas, rinsed, drained
  • 2 carrots, peeled, thickly sliced
  • 1 brown onion, coarsely chopped
  • 1/3 cup (100g) mild Indian curry paste (such as korma)
  • 1 cup (250ml) salt-reduced chicken stock
  • 400g can diced tomatoes
  • 2/3 cup (160ml) Coles Coconut Milk
  • 175g green beans, trimmed

STEP 1

Remove skin from chicken and discard. Heat oil in a frying pan over medium-high heat. Cook chicken, in batches, for 3 mins each side or until browned. Transfer to a slow cooker with the chickpeas.

STEP 2

Reduce heat to medium. Add carrot and onion to the pan. Cook, stirring, for 5 mins or until vegetables soften and are golden. Add curry paste. Cook, stirring, for 30 secs or until aromatic. Add the stock, tomato and coconut milk and stir to combine, gently scraping the base of the pan. Pour the onion mixture over the chicken and chickpeas in the slow cooker.

STEP 3

Cover and cook for 3½ hours on high (or 5½ hours on low). Add the beans. Cover and cook for 30 mins on high or until the chicken is cooked through and beans are tender.


Serve with basmati rice, yoghurt, sliced cucumber and naan bread
