Summer is here, bring on the salads! Lately, my go-to lunch during the work week has been something I’ve cooked on the weekend on top of a bed of greens. Buying a $4 bottle of vegetable oil, vinegar, thickeners and preservatives wasn’t her thing so she usually made her own. At the time I didn’t appreciate it, but now I can’t remember the last time I bought salad dressing from the store. It’s so easy, fresh and fun to make your own and and you can easily customize and complement your dressing to your dish. Plus, it just tastes amazing!

I got this salad idea from one of my random lunches. I had one little store-bought, vegetarian samosa on top of a big pile of greens. I wanted more samosa flavor (without the fried pocket part) and a cilantro dressing to top it all off. I’m a big cilantro fan, I could eat it as a salad by itself! This salad is so packed with flavor you won’t even notice it’s vegan. The chickpeas are seasoned and baked for a crispy crunch. If you haven’t tried baked chickpeas yet, you should! They are easy to make and fun to eat. The carrots and potatoes are tossed in curry, then roasted – they’re so sweet and flavorful this time of year. Oh and I could go on and on about this lemony-garlic-curry-cilantro-with-a-touch-of-mint-dressing, but that’s me, the cilantro lover talking.

Ingredients

For the Salad

  • Lettuce
  • 1 Cup Fresh peas
  • 7 Whole Carrots
  • 1 Pound Fingerling potatoes
  • 2 Shallots

For the Crispy Chickpeas

  • 1 Cup Or Can of Chickpeas
  • 1 Teaspoon Curry powder
  • 1 Teaspoon Cumin
  • 1 Teaspoon Garlic powder
  • 1 Teaspoon Pepper flakes (if you like it spicy)
  • Pinch of Salt and pepper
  • High heat oil

For the Dressing

  • 1 Bunch of Cilantro
  • 3 Garlic Cloves
  • 2 Oregano cuttings
  • 2-3 Mint Leaves
  • 3 Tablespoons Olive oil
  • Juice of whole lemon
  • 1 Teaspoon Curry powder
  • 2 Pinches of Cumin seeds
  • Pinch of Salt and pepper
  • Pinch of Pepper flakes (if you like it spicy)

Martha Stewart Just Shared Her Favorite Summer Salad Recipes With Us & They Couldn’t Be Simpler

We love winter comfort food cooking, but summertime dining, with all of the fresh produce finally hitting the market, is even better. Whether we’re firing up the grill or heading to the farmer’s market, nothing beats a fresh, seasonal meal, and Martha Stewart seems to agree. We recently had the chance to chat with her about some of her favorite summer meals, from her favorite no-cook dinner recipe to salads. After all, what pairs better with grilled chicken or barbecue ribs than something cool, crisp, and fresh?

Of course, there are almost as many salad recipes out there as there are vegetables, so we asked Stewart to narrow it down. What she told us? “I love watermelon salad, caprese salad, and Greek salad for the summer.”

We couldn’t agree more. All three of these salads are fairly simple, highlighting the fresh beauty of ripe summer produce, and all of them are just what we’d want to eat on a hot day. Get your favorite wooden salad bowl and salad servers ready, because you’re going to want to make all of these Martha Stewart salad recipes.

First up, watermelon salad. There are a few different ways that you can make a watermelon salad, but we like this simple version best: simply toss cubed seedless watermelon with fresh lime juice, a chiffonade of basil, and a sprinkle of salt and pepper. To finish, add some salty feta cheese on top. The feta and lime juice play beautifully with the watermelon’s sweetness, and it works just as well as a light lunch as it does a side dish.

Next, a classic caprese salad. This one really couldn’t be easier. It’s designed to highlight the magnificence of ripe summer tomatoes. All you need to do is pair sliced tomatoes with fresh mozzarella cheese, basil, and a drizzle of extra-virgin olive oil. Add salt and pepper to taste, and you can also drizzle on some balsamic vinegar if you’re feeling frisky. Eat as is, then pair the leftovers with cooked pasta to make a fresh summer pasta salad.

Finally, Greek salad. This pizza parlor favorite helps to lighten up heavier meals, and we love serving it with grilled meats, either as a side dish or as a bed for things like lemony grilled chicken or flank steak.

To make Stewart’s Greek salad, whisk up a simple red wine vinegar dressing seasoned with dried oregano and minced garlic. Then, drizzle your dressing over a big bowl filled with torn romaine lettuce, halved grape or cherry tomatoes, crumbled feta cheese, some thinly sliced red onion, a fresh crunchy cucumber, and pitted kalamata olives. There’s so much flavor in this salad that even with a short ingredient list, it totally sings. Stuff the leftovers into pita bread and you’ve got a surprisingly satisfying meal.

13 Easy, Fresh Ina Garten Salad Recipes Perfect for Spring Meals

Spiced Samosa Potato Salad

Samosas are little pastry pockets of potato-y goodness, spiced with Indian flavours, deep-fried, and served with refreshing cilantro chutney. My samosa-eating days came to a screeching halt when I went gluten-free and my mouth would water with envy as my family and friends devoured them at parties and dinners. I’m sure I looked pretty pathetic as I sulked.

After going gluten-free, I attempted making samosa spring rolls using Vietnamese rice paper wraps, which turned out to be an epic fail. I was left with oil everywhere, grease burns, a burnt pot, etc. But I also had leftover samosa potato filling and chutney dipping sauce which I ended up combining to make a delicious potato salad. So now whenever I crave samosas, I make this spicy potato salad instead. It’s not only great for easy cleanup, but it’s also way better for my waistline and arteries.

The potato mix is adapted from 500 Chili Recipes, which D found at Borders in the clearance section for $5. Best $5 score ever. It’s such a great book with spicy recipes from around the world, pictures for each dish, and clear simple recipes – I definitely recommend this cookbook for anyone who loves exotic spicy eats. The coriander chutney is adapted from an old issue of Fine Cooking – one of my fave cooking mags.

What gives the potatoes a distinctly samosa-y flavour is the combo of onions, ground coriander, ground cumin, and peas. A little saute action to soften the onions and toast up the spices is key. Easy peas-y.

The coriander chutney is very refreshing – both sweet and tangy at the same time. Throwing everything into a food processor is all you need to do for this one. I use leftover chutney on salads. Samosadillas and Salad for dinner on the patio

I look forward to summer and having our meals on the patio. So I made these quick and easy samosadillas and a favorite salad to go with it.

I was taking some quick photos as my husband got home from work. I announced that the samosadillas were hot and crispy and that we should dig in. My husband was amused. “What are samosadillas?” he asked. “Quesadillas with a samosa stuffing, of course” I said. “So that is what popped in your head today, huh?” he said smilingly but I could sense his skepticism knowing that he likes the traditional Mexican quesadillas. Luckily, one bite of the samosadilla and he was hooked! It now has an equal standing with the traditional quesadillas, so the samosadillas will be on our menu often !

The stuffing is the easiest samosa stuffing you will ever make. I used a combination of spinach and red baby potatoes with their skin.

We have a small but quiet backyard, which is my oasis. Summer goes by so fast, doesn’t it? Quick and easy meals like these are fun and relaxing, even on weeknights. I topped the samosadillas with a homemade tomato chutney. I had it handy as I had made it earlier in the week. Mango salsa or pico de gallo would also go well with it. I served them with store bought spicy green chutney and the sweet and sour tamarind chutney.

Samosa Grilled Cheese

Ok. Let me start by saying that if you have to pick just ONE recipe to make from this little blog of mine, you want it to be this one. The potato filling inside of this sandwich isn’t technically the same one I use to stuff samosas, but in my house, we still refer to this as the “samosa grilled cheese.” Generally, I don’t care for potatoes (except buttery cheese-loaded mashed potatoes) but I swear I could eat a dozen of these! It’s got spicy and sweet chutneys, Amul sliced cheese and I swipe a little mayo on the outside of the bread before laying it down in the skillet ( the trick to a perfectly golden crust).

I always keep a cilantro chutney and a tamarind date chutney in the fridge or freezer but if you don’t have a “go-to” family recipe for either, you can buy a ready-made version from an Indian grocery store. I find the best ones to be in the frozen section versus on the shelf. I do have the recipe for my mom’s chutneys which are absolutely amazing- and I promise I will share those soon so stay tuned!

I did include a quick recipe for the sweet chutney if you want to make something homemade. It’s a version my mom would always make when we ran out of the “from scratch” stuff.

Serve these sandwiches nice and hot with a little extra chutney on the side of dippin!
