These brownies are amazing, big hit in the family. Really easy to make, brilliant to make with children.

  • 400g caster sugar
  • 225g melted butter
  • 60g cocoa powder
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 225g plain flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 60g chocolate chips (optional)

  1. Mix all ingredients in order given.
  2. Bake at 180 C / Gas 4 for 20-25 minutes in a rectangular 23x33cm greased baking tin.
  3. Cool and slice into equal square portions.

S’mores Brownies – Just As Delicious But Without The Mess

I adore s&rsquomores. I could eat s&rsquomores in just about any form &ndash chocolate bark s&rsquomores, s&rsquomores cookies, s&rsquomores stuffed strawberries, s&rsquomores cake &ndash the list goes on. So of course I had to make s&rsquomores brownies. And oh my word are they delicious.

S&rsquomores are best when you&rsquore sitting around a campfire with a freshly roasted marshmallow and the chocolate is melting over your fingers as you slurp up the delicious mess.

Unfortunately, I don&rsquot make campfires nightly. And honestly, I don&rsquot love messes. S&rsquomores created in brownie form now that&rsquos brilliant.

These s&rsquomores brownies have the slightly crunchy graham cracker crust you want. The fudgy brownies satisfies that rich middle layer, and marshmallow fluff baked into the brownie batter? Just pass the plate already!

Of course you hear s&rsquomores brownies from scratch and run in the opposite direction, thinking about the work involved. Stop! Come back.

The added deliciousness doesn&rsquot add much work, and the flavor makes everything worthwhile. I make homemade marshmallow fluff, but feel free to use store bought. Technically, you could use a brownie mix instead, too, but making them from scratch is quick and easy.

So, grab a box of brownie mix and add my signature secret (not so secret anymore) ingredients, and you will instantly become the best brownie maker people know. You will quickly become the envy of the class mother, every soccer mom around, and the house that every kid wants to have a play date at. And if you make them for your boo, he will very soon be down on bended knee asking you to spend the rest of your life with him. Ok…I may have gotten a little out of control on the last one and I certainly can’t make any promises, but hey, what do you have to lose?

Cooking Tips & Tricks for Keto Peanut Butter Brownies

  • Batter will be thick so be sure to spread evenly in baking pan
  • Ensure butter has cooled for a few minutes before adding eggs
  • Store the brownies? Brownies keep well for a 3-5 days in an airtight container
  • Can I freeze brownies? Either freeze in an airtight container or wrap individually in cling film for a slightly fresher result and to avoid freezer burn. While it’s a bit more effort to freeze wrapped, they make a great grab and go snack from the freezer when you’re rushing out the door. The brownies will freeze well for up to 3 months.
  • Burnt brownies? Use a smaller tray to make a thicker brownie and reduce the temperature.
  • When are brownies cooked? Brownies are done when edges start to look dry
  • Too sweet? If you would like them to be less sweet, reduce the sweetener to 1/4 cup
  • Want more chocolate? Don’t we all… stir some sugar-free chocolate chips through the batter (or 85-90% cocoa dark chocolate chopped up finely).


Add milk, cream and salt to mixing bowl for 18 minutes/100 degrees/speed 2.

Turn up to speed 4 with no heat. Add vinegar quickly and switch off immediately. Leave to rest for 10 minutes.

Very gently pour or lift the ricotta into a lined sieve (clean tea towel, chux, nut bag, muslin) and let sit for 10 to 20 minutes.
