  • 30g butter
  • 3 cloves garlic, peeled
  • 1 teaspoon cayenne pepper, to taste

  • 1 teaspoon ground cumin
  • ½ teaspoon harissa paste
  • 1 whole chicken, cleaned and patted dry
  • salt and freshly ground pepper
  • 1 lemon, cut in half

  1. Preheat the oven at 210 C / Gas 6-7. Mix onion and coriander and create a bed of it in a greased roasting pan.
  2. Using a mortar, crush butter, garlic, cayenne pepper, paprika, turmeric, cumin and harissa. Rub the chicken with this mixture. Rub also under the skin by lifting it gently with your fingertips, and then inserting the spice mixture underneath. Add generous amounts of salt and pepper, then place the lemon halves inside the chicken.
  3. Place the dish in the preheated oven, and roast for 1 hour, basting frequently with water.
  4. After 1 hour, cover the chicken loosely with aluminium foil and reduce the oven temperature to 180 C / Gas 4. Roast for another 15 minutes. Remove from the oven and let the chicken rest for 10 minutes, covered with the foil, before carving it. Serve with baked potatoes, couscous or bulgur.

    2. Position rack in bottom third of oven preheat to 400°F. Sprinkle main cavity of chicken with salt and pepper fill with herb sprigs. Starting at neck end, slide fingers under skin of breast and upper part of legs, loosening skin. Spread 3 tablespoons herb butter under skin on breast and upper leg meat. Place chicken on rack in large roasting pan tie legs together loosely to hold shape. Scatter onions around chicken. Brush chicken and onions with 2 tablespoons herb butter sprinkle with salt and pepper.
    3. Roast chicken 30 minutes. Remove pan from oven. Scatter garlic cloves around chicken. Brush chicken, onions and garlic with 1 tablespoon herb butter. Roast chicken and vegetables 30 minutes. Reserve 1 tablespoon herb butter for sauce brush remainder on chicken and vegetables. Continue to roast until chicken is golden and thermometer inserted into thickest part of thigh registers 180°F, about 30 minutes longer. Insert wooden spoon into main cavity tilt chicken so that juices drain into pan. Transfer chicken to platter surround with onions and garlic. Tent with foil.
    4. Set roasting pan over medium-high heat. Add broth and wine bring to simmer, scraping up browned bits. Pour pan juices into large glass measuring cup. Spoon off fat discard fat. Pour juices into medium saucepan. Stir reserved 1 tablespoon herb butter and flour in small bowl to smooth paste. Bring pan juices to simmer whisk in paste. Simmer sauce until slightly thickened, whisking occasionally, about 4 minutes. Season with salt and pepper. Serve chicken with sauce.

    I don't know if my parents will like this five spice roast chicken drumstick recipe, but I sure enjoyed it. Paired with some nicely spiced rice and roast veggies that absorb all of that flavorful pan juice, it makes for a pretty hearty dinner.

    Method

    1. Preheat the oven to gas 4, 180°C, fan 160°C. In a large roasting tin, spread out the onion slices in a single layer. In a bowl, combine the butter with the cinnamon, cumin , paprika, honey and lemon zest season well.
    2. Put the chicken on a flat surface. Using your hands, gently ease the skin away from the breast and spread half the spiced butter over the flesh.
    3. Press the skin back in place and smooth it out to ensure the butter is evenly distributed. Spread the remaining butter over the chicken (reserving 1 tbsp for the gravy), and then drizzle with the olive oil. Put the lemon halves into the cavity, and then transfer the chicken to the roasting tin, sitting it on the onions, breast-side up.
    4. Loosely tie the legs together with kitchen string, and then deeply score the drumsticks three times using a sharp knife. Pour in 100ml (3 1/2fl oz) of stock, then cover the tin with kitchen foil, sealing the edges. Roast for 1 hour.
    5. Increase the oven temperature to gas 6, 200°C, 180°C. Remove the foil and continue cooking for a further 20 minutes, or until the skin is golden and the juices run clear with no trace of pink when the thickest part of the thigh is pierced with a skewer.
    6. Remove the chicken from the oven and cover loosely with foil. Leave to rest for 20 minutes, then transfer to a chopping board. Keep it covered while you make the gravy.
    7. Spoon the majority of the fat from the roasting tin, leaving behind a generous tablespoonful. Stir the four and reserved butter into the cooked onions and remaining juices.
    8. Put the tin over a high heat and cook for 1-2 minutes, stirring constantly. Gradually add the remaining stock and bring to the boil. Simmer for at least 2 minutes, or until thickened. Strain the liquid into a clean pan and keep warm while you carve the bird. Serve the chicken with the gravy and vegetable sides.

    That title’s quite a mouthful isn’t it? Indian-Style Whole Masala Roast Chicken. Who even says that stuff?! Honestly, I couldn’t think of what else to call it. Because it’s an Indian version of the Roast Chicken, with lots of masala and is roasted whole. And needless to say, it’s delicious. It’s been made so many times now, that it’s brother-in-law, father-in-law, mother-in-law, husband and friends approved!

    So you can basically dive right in, get that whole chicken and try it today, or for Christmas if you plan to celebrate with a large spread!

    This may look fancy and difficult, but I promise you won’t have to go searching for ingredients because they are sitting right there on your shelf. Neither will you have to worry too much about how that chicken is going to cook because if you follow the instructions, it is going to be JUICY and SPICY and will make you wonder how often you can get away with making it.

    While this recipe is simple, here are a few things to keep in mind so that you get a true winner:

    • Get good quality chicken, and make sure to keep the skin on. While roasting a chicken whole, the skin ensures that the chicken remains juicy and doesn’t dry out.
    • Ingredients such as ginger and garlic should be freshly prepared so that you get the best flavor.
    • Know your oven because oven temperatures vary a little bit. So you may need to adjust the time slightly to make sure the chicken cooks just right.
    • This recipe requires a fair amount of butter and please don’t skimp on it. Butter is always better.
    • Make sure the chicken fits snugly in your roasting pan, while leaving space for the potatoes, garlic, lime slices and onions. Get a good baking pan or casserole. The Fujihoro casserole that I use in this recipe is multi-purpose and fantastic because it can go from stove to oven and can handle high temperatures. I use it for everything from curries to bakes to roasts.
    • Finally, DO NOT cut into the chicken immediately. Cover and let it rest for at least 10 minutes. Trust me, the wait is worth it.

    Preparation

    1. For chicken:
      1. Place onion, garlic, apple cider vinegar, honey, ground allspice, chopped fresh ginger, chopped fresh thyme, salt, ground black pepper, seeded and minced chile, cinnamon, and nutmeg in processor. Purée marinade until coarse paste forms. Place chicken in large resealable plastic bag. Add marinade to chicken in bag and seal. Turn chicken to coat. Refrigerate at least 8 hours or overnight, turning chicken occasionally.
      2. Preheat oven to 400°F. Arrange chicken pieces, with marinade still clinging to chicken, on rimmed baking sheet. Brush chicken with oil. Roast until cooked through, about 45 minutes.
      1. Spray another rimmed baking sheet with nonstick spray. Whisk butter, honey, lime juice, and ground cinnamon in large bowl. Add potato slices toss to coat. Arrange potato slices in single layer on prepared baking sheet. Sprinkle with salt and pepper. Bake potatoes alongside chicken until tender, about 25 minutes. Serve chicken with potatoes, passing mango chutney separately.

      Finely grated zest of ½ small lemon, plus 1 tsp lemon juice
      Salt and black pepper
      750g new potatoes (cut in half if large)

      Bring a large pan of water to a boil, blanch the peas for a minute, then drain. Set aside one-third of the peas and put the rest in a food processor with the chillies, preserved lemon, coriander leaves, oil, lemon zest, a third of a teaspoon of salt and plenty of pepper. Blitz to a rough paste.

      Bring a large saucepan of well salted water to a boil, then cook the potatoes for 15 minutes, or until soft. Drain, transfer to a large bowl and roughly crush: you want at least a third of them left more or less whole. Add the blitzed and whole peas to the bowl with the lemon juice and chopped coriander, gently stir through and serve warm
