Tahini or sesame paste is an indispensable ingredient in the hummus recipe. It's easy, but you need a kitchen utensil strong enough to grind sesame seeds well. You can put oil according to your preference, to reach the desired consistency, but the paste must flow from the spoon. I used sunflower oil, but you can also use sesame oil. I do not recommend using extra virgin olive oil because it is too strong and changes the taste of sesame paste.

I made hummus for her, food that comes from the Middle East. It's mustard with chickpeas and tahini, sesame paste. And with garlic and parsley. And with lemon juice. These are the ingredients without which it's not exactly hummus. Then comes the part where fantasy speaks for itself. I put a few lemon leaves, especially to satisfy Ioana's penchant for flavors. I used canned chickpeas, ready boiled.

Fortunately, sesame paste can be found in almost any supermarket.

I also used a little goat yogurt, as I saw a Lebanese friend make.

I put the garlic, salt and a few peppercorns (I had green) in the mortar.

I picked the lemon leaves from the garden and washed them.

Sunflower seeds were a suitable addition.

I put in a bowl the chickpeas, tahini, yogurt, lemon.

I squeezed half a lemon over them.

I turned the garlic, pepper and salt into a paste that I put in the bowl with the other ingredients.

I mixed well for three or four minutes.

Tahini, or sesame paste is an Arabic-inspired recipe, the original way of preparation of which is a little more complicated. But we chose a simple recipe for home cooking, which contains only 2 ingredients: sesame seeds and vegetable oil, not necessarily sesame or olives.

• 2-3 tablespoons extra virgin sesame / olive oil (optional)

To prepare a more fragrant and tasty tahini, sesame seeds can be fried. They will also acquire a darker color. The easiest way to fry sesame seeds is to fry them in a pan, but it takes a lot of care not to burn them. They should be fried just enough to become slightly brittle and shiny, not browned at all. They will be constantly turned with a wooden spoon, so as not to catch or burn.

Another option is to put the sesame seeds in the preheated oven at 350 degrees. Put the sesame seeds on a tray lined with baking paper, and bake for 10-15 minutes, turning them on all sides so as not to burn.

Next comes the grinding of sesame seeds. These can be given through the coffee grinder, through a high-speed robot, or with the help of a manual blender. Add the oil and seeds, and start grinding. It all takes about 3-5 minutes, if mixed in 3-4 rounds, with a short break time between. The resulting paste must be as fine as the commercial one, so we must be careful how much oil we use.

The sesame paste thus obtained is kept in a jar with a lid in the refrigerator. It lasts a few months. From the amount of ingredients used will result in about 2 cups of sesame paste.

Traditional tahini is made from sesame seeds in shell, and not from those peeled from the store, because it will not come out as creamy. In the outer shells are found many nutrients, especially calcium, which are lost through the peeling process.

If you can't find whole sesame, add 2-3 tablespoons of sesame oil or extra virgin olive oil to the pasta preparation. The oil will give the cream a finer texture, but will slightly change the flavor. Hello dear lusts. Today I prepared PASTA TAHINI. After I posted my Classic Hummus recipe many of you wrote to me that you can't find tahini paste in the markets. So today I show you my version of tahini pasta that consists of 3 ingredients. It is prepared very quickly and you can use it in different types of sauces, as a dressing for salads, fallafel, etc. I hope you like this recipe and enjoy it. Ingredient:

  • 150 gr. - Susan
  • 5 tablespoons - sunflower (or olive) oil
  • 1/3 teaspoon salt

Method of preparation:

  1. Heat a pan over low heat and put the sesame seeds in it. Brown the sesame for about 4-5 minutes, stirring constantly, it is very important not to burn it.
  2. Then transfer the sesame to a bowl and let it cool, it is important not to leave it in the pan because you risk burning from the hot pan.
  3. Put the sesame in the container of a hand blender or in a regular one. Add salt and pour olive oil on top, but make sure it is not bitter beforehand. You can also use sunflower or sesame oil.
  4. Crush everything with a hand blender until you receive a slightly liquid and homogeneous paste.
  5. Store the tahini paste in the refrigerator.

THE BEST Tahini Sauce!

Tahini sauce is popular throughout the Mediterranean and the Middle East. This simple, sour and full of flavor sauce is made by mixing rich tahini paste with nuts, citrus (lemon juice or lime juice), fresh garlic and a little water to help consistency.
