Ouale is separated. Pour the egg yolks mixed with oil and grated lemon peel over the beaten egg whites with the sugar. Then add the flour mixed with baking powder and add the rum essence. 2/3 of the composition is poured into a tray lined with baking paper or greased with oil and lined with flour. What is left in the bowl is mixed with cocoa and then poured into the tray, over the white composition pouring it lightly from one end of the tray to the other. With the tail of a fork or spoon, mix lightly, circularly, several times the compositions in the tray. Bake on medium heat for about 45 minutes and try with a toothpick.
