  1. Preheat oven to 180 C / Gas mark 4. Lightly grease a baking tray.
  2. In a small bowl, mix together mayonnaise, mustard, horseradish and lemon juice. Stir in 4 tablespoons breadcrumbs and 1 tablespoon Parmesan cheese. Arrange fish steaks on the prepared baking tray. Spread breadcrumb mixture evenly over fish.
  3. In a small bowl, mix together melted butter, remaining breadcrumbs and remaining Parmesan cheese. Sprinkle over the coated halibut.
  4. Bake for 15 to 18 minutes, or until fish flakes easily with a fork.

Something else.As I was sharing this dinner with someone who is lactose intolerant, I could not use parmesan cheese in the recipe; instead, we added ground macadamia nuts - it turned out great. Even my seven-year-old (who hates both mustard and horseradish.. )-15 Sep 2008

Altered ingredient amounts.This recipe is FANTASTIC! However, I would recommend using only 1 tsp. of the Dijon mustard- not 1 tbsp. The flavour of the Dijon mustard can be overpowering, potentially masking the flavour of the halibut. Also, make sure you cook it at a higher temperature. Otherwise, the breadcrumb-crusted fish will be a bit soggy at the bottom. However, if you use high heat, this will quickly evaporate all of the water that naturally comes out of the fish when baked. Other than that, this recipe has a GREAT flavour. The Parmesan adds a great flavour. I served it as a fish sandwich with aioli on the side. Delicious!!!-15 Sep 2008


Dijon Crusted Halibut…

Although we try to eat a lot of fish, I don’t usually buy halibut because it can be quite pricey. But the other day when I was at the grocery store they had just cut some fresh halibut and it looked so good I had to buy some.

I’m always a little nervous about making halibut because I don’t want to overcook it. It’s somehow easier for me to rationalize making a mistake with salmon (although I have that pretty much down to a science) than with halibut. But I just couldn’t resist how good and fresh the halibut looked and decided to try this recipe for making it.

So let’s talk Dijon crusted halibut…

Lesson Learned 1 – Do you leave the skin on or not: That is the perennial question, isn’t it? I prefer removing the skin but you can certainly leave it on. Some think that by leaving the skin on the fish tends to be more moist. In my experience I don’t know that to be the case. So the decision is up to you. I prefer removing the skin but the choice is up to you. Either way, it doesn’t seem to affect the overall cooking time of the fish.

Lesson Learned 2 – The hardest thing about this recipe is determining when the fish is done: The best way to determine that is to take a fork and try flaking off a small piece on the end of the fish. If it flakes off, it is done. The only advice I can give with cooking fish is it takes time and practice to perfect that skill. Basically you have to get to know the type of of fish you’re using and how your oven functions. I realize that may be little comfort where a more expensive fish like halibut is concerned, but once you’ve got the hang of it, you’ve got it!

The end of the fish is flaky – the fish is done.

Always cook the fish for the least amount of time that a recipe calls for and go from there. You can always put the fish back in the oven but you can’t change things when it’s overcooked. I know in my oven a 4-5 ounce salmon filet is cooked the way we like it at 375 for 20 minutes. (keep in mind I am at high altitude and cooking temperatures on average can be 15-25 degrees higher than on any given recipe designed for sea level).

Also, the cooking process determines the oven temperature and cooking times. This particular recipe is done entirely in the oven. Sometimes I make fish (and you can certainly do this with halibut) where I lightly brown the fish on both sides in a skillet on top of the stove and finish off the cooking process in the oven. Doing that normally changes the oven temperature and cooking time. So the cooking process will determine what temperature and how long you cook the fish.

This particular recipe is done entirely in the oven. When I made the fish I cooked it at 365 for 15 minutes and it turned out great. Again, keep in mind I am at high altitude and most recipes are not written that way so for my sea level friends I recommend baking the fish at 350 for 15-18 minutes. If you are unsure for any reason check the fish at 15 minutes. You should be just fine if you do.

And that’s it. Just a few last thoughts – I’m writing this recipe for 2 people put you can certainly make it for more. Just increase the crust ingredients proportionately. Also, the combination of mayo, horseradish and lemon creates a wonderfully flavorful crust for the halibut. Once you make this, I’m sure you’ll want to make it again. It’s just that good! And guess what – the crust works equally as well on cod so you have a less expensive choice as well. Enjoy!

Dijon Crusted Halibut.

INGREDIENTS

1 tsp. prepared horseradish

1/4 cup bread crumbs, separated

2 tsp. grated Parmesan, separated

2 4-5 ounce halibut filets

DIRECTIONS:

Preheat oven to 350 degrees (365 for high altitude). Line a baking sheet with foil. Set aside.

In a small bowl mix together the mayo, mustard, horseradish and lemon juice. Stir in 1/8 cup (half) of the bread crumbs and 1 tsp. (half) of the Parmesan cheese. Spray the foil lined baking sheet with cooking spray. Arrange the filets on the baking sheet and spread the mayo/crumb mixture on top of them.

In a small bowl mix together the remaining bread crumbs, Parmesan and melted butter until thoroughly combined. Sprinkle this coating on top of the halibut filets.

Bake for 15-18 minutes, checking the filets at 15. The fish is done when it flakes easily off the end of the fish with a fork.

1/2 cup mayonnaise

1/2 cup dry bread crumbs
3 tablespoon grated Parmesan cheese
32 ounces halibut
1 tablespoon margarine -- melted
1/2 cup dry bread crumbs
2 tablespoon grated Parmesan cheese
Instructions
Preheat oven to 350 degrees F (175 degrees C) Lightly grease a baking sheet.
Mix together mayonnaise, mustard, horseradish, and lemon juice in small bowl.
Stir in 1/2 bread crumbs and 1 tablespoon Parmesan cheese.
Arrange fish fillets on the prepared baking sheet. Spread bread crumb mixture evenly over fish.
In second small bowl, mix together melted margarine, 1/2 cup bread crumbs, and 1 tablespoon Parmesan cheese.
Sprinkle over the coated halibut.
Bake for 15 minutes
For the last 5 minutes turn on the broiler and toast bread crumb topping until golden brown.
When fish flakes easily with a fork its done.
Quick notes
The halibut steaks I was using were 1/2 to 3/4 of an inch thick. If your halibut steaks or fillets are thinner bake for 12 minutes and broil until bread crumbs lightly toasted. Then check to see if fish flakes easily - if it does its done.

You can vary the amount of topping you make to suit the amount of halibut you have. The taste will be the same as long as you maintain the same ratio with the Dijon mustard, horseradish, Parmesan Cheese and Lemon Juice. For instance if you are making a smaller amount of fish and using 1 tablespoon of Dijon use 1 tablespoon each of horseradish, Parmesan Cheese, and lemon Juice.


Dijon and Herb Panko-Crusted Halibut

My kids have been asking for more fish recipes lately. I picked up some freshly caught wild halibut and decided to season it with lemon juice, Dijon mustard, and seasonings before topping it with a lemony herb panko topping. I baked it at a really high heat and it turned out moist, flaky, and absolutely delicious. My husband and I both thought it was excellent. My daughter scraped off the topping but loved the fish and my son had thirds and absolutely loved it. This fish paired nicely with the Green Beans with Lemon and Garlic.

Preheat the oven to 425 degrees.

Combine the panko crumbs with the parsley, fresh basil, lemon zest, minced garlic, olive oil, sea salt, and freshly cracked pepper, to taste. Combine with your fingers until evenly mixed.

Squeeze the juice from half a lemon over the halibut fillet. Spoon the Dijon mustard on top of the halibut and spread evenly. Season the fish with sea salt and freshly cracked pepper. Press the panko mixture thickly on top of the mustard… the mustard will help the panko adhere.

Heat the vegetable oil in an OVEN PROOF skillet or Dutch oven. When the oil is very hot, add the halibut fillet, skin side down, and sear for 3-4 minutes, without turning, to brown the skin.

Transfer the pan to the hot oven for 15-20 minutes or until the thickest part of the halibut flakes easily. Remove from the oven and cover with a tin foil tent for 5 minutes. Serve the halibut with lemon wedges. Enjoy.


Walnut- and Dijon-Crusted Halibut

Place walnuts in a large ziplock plastic freezer bag. Seal bag, and crush gently with a mallet or heavy pot until nuts break into small pieces. (Do not overcrush nuts.) Combine nuts and thyme in a shallow dish. Place flour in a separate shallow dish. Combine Dijon and egg white in a third shallow dish.

Press tops of fillets in flour shake off excess. Dip floured side of fillets in egg mixture shake off excess. Sprinkle fillets with salt and pepper. Dip egg side of fillets in walnut mixture, pressing to adhere.

Heat oil in a large ovenproof nonstick skillet over medium. Place fillets, walnut side down, in skillet. Cook until walnuts are golden and toasted, 3 to 4 minutes. Turn fish. Bake at 400°F until fish flakes easily with a fork, 4 to 5 minutes. Serve with lemon wedges.


Seafood Recipe: Pecan Crusted Halibut with Dijon Cream Sauce

Combine flour, salt, and pepper in a shallow bowl. Whisk eggs in another shallow bowl. Combine pecans and breadcrumbs in a third shallow bowl.

Dredge each halibut fillet in flour mixture, shaking off excess. Dip halibut in egg to coat drain excess. Place halibut in pecan mixture, pressing slightly to coat both sides of fillets.

Melt 2 tablespoons butter over medium heat. Add fillets, in batches, and cook 2 minutes on each side or until lightly browned, adding additional butter as needed. Arrange fillets on a foil-lined baking sheet. Bake for 10 minutes or until done. Serve with Dijon Cream Sauce. Recipe follows.

I recommend checking around 5 minutes of cooking time if your fillets are not very thick.

With this recipe, you don't need to flip the fish over cook on one side until the fish is done.

Tip: air fryer halibut is done when the fillets flaked with a fork easily.

  • In a small bowl, mix together mayonnaise, mustard, horseradish, and lemon juice. Stir in 1/4 cup bread crumbs and 1 tablespoon Parmesan cheese. Arrange fish fillets on the prepared baking sheet. Spread bread crumb mixture evenly over fish.
  • In a small bowl, mix together melted margarine, 1/4 cup bread crumbs, and 1 tablespoon Parmesan cheese. Sprinkle over the coated halibut.
  • Bake for 15 to 18 minutes, or until fish flakes easily with a fork.
