There are two types of nettles: dead nettle and dwarf or Greek nettle.
The Greek nettle grows up to 20 cm, has a yellow-green leaf and a very bad "nettle" when we touch it.
Nettle is the healthiest green food, being a real plant of beneficial substances and having exceptional healing properties.

RECIPE PREPARATION Greek nettles:

In a pot we put water with a pinch of salt to boil and when it boils we add the washed nettles (carefully ...) in more water.

After they are scalded, we drain them from the water and stop a glass with the juice in which they boiled. We start to rub them with a wooden spoon (or blender) adding flour, breadcrumbs, crushed garlic and vegetables to taste.

Thin with the juice in which they boiled.

Heat the oil in a pan and add the nettles.

We harden them until they thicken and bind well.

Serve with cold polenta.

Greek meatballs with 2 types of minced meat. You have to try them, it's well worth it

I love Greek food, which is why I often prepare this meatball recipe. Because everyone who tasted the Greek meatballs told me that they are delicious, I decided to share the recipe with you. It's not heavy at all.

Ingredient:

  • 500 gr minced pork, 0.5 teaspoon oregano
  • 500 gr minced beef, 100 gr bread, Feta cheese to taste
  • 150 gr onion, 2 cloves garlic, wheat flour to taste
  • 1 tomato, 3 tablespoons vinegar, 2 teaspoons olive oil
  • Salt, pepper to taste, 4 teaspoons mint, sunflower oil to taste

Method of preparation:

Mix the two types of minced meat. Soak the bread in water, drain and add to the bowl of minced meat. Mix everything very well.

Onions, garlic and peeled tomatoes are given through a coarse grater. Add these ingredients to the minced meat mixture. Also add oregano, vinegar, black pepper and olive oil. Knead the minced meat.Add chopped mint and mix again. Put the minced meat in the fridge for at least 1 hour. After 60 minutes, remove the minced meat from the refrigerator and form small balls out of it.

In each ball add a piece of feta cheese. Pass the meatballs through the flour and fry in a hot pan with sunflower oil.After the meatballs have been fried, remove them on a paper towel to absorb the excess oil.

Greek meatballs can be served with fresh vegetable salad. They are suitable for a family dinner or a festive event. Good appetite and increase cooking!

I don't know how onions can ruin the taste of nettles and I don't know how others can eat nettles without a little hardened onion. The nettles are sticky and the onion binds them a little and gives them taste. This is my opinion.

When I was little at my mother's house, I loved the nettles with garlic, as my mother prepared them.
After I got married I moved to Banat and my wife has another way to prepare nettles which are quite good, but they did not taste the same as my mother's at home!
So I boiled the nettles, drained the juice, after they cooled I put them in a blender in which I put 2 tablespoons of flour and nettle juice, and chopped them very little to it doesn't come out too fine.
I put on the fire a cauldron with a few ligures of oil, after the oil warmed up I put 2 cloves of finely chopped garlic to harden, then I added the nettles and chewed continuously for about 10-15 minutes, I put another ligure of vegeta and 2 more cloves of garlic given through a fine grater.
I can tell you that they turned out delicious and 90% like the ones my mother made!

Ingredients Pie with cheese and nettles

  • 500 grams of flour,
  • 300 ml. of water,
  • 3 tablespoons olive oil,
  • 1 teaspoon salt
  • 25 grams of yeast
  • 300 grams of lightly salted cheese, well drained whey,
  • 1 onion,
  • 3 tablespoons olive oil,
  • oil for greasing,
  • sprinkle flour,
  • egg yolk for greased pie,
  • sesame seeds for sprinkling (optional)

Cheese and nettle pie preparation:

Dissolve the yeast in warm water, mix the flour with the salt and knead a smooth dough, adding the olive oil. Place the dough in an oiled bowl and let it rise in a warm place until it doubles in volume.

Choose and wash the nettles (or spinach).

Cut the onion into small pieces and cook in 3 tablespoons of olive oil until lightly browned.

Add the nettles broken into pieces (or spinach) over the onion and cook together until the green leaves fall and soften. Season with salt and pepper and leave in the pan to cool.

Cover the table with a tablecloth made of thicker cloth, which is sprinkled with flour. The raised dough is placed in the middle, first stretched with a rolling pin in the shape of a disc, then pulled with your hands on all sides, stretching it as thin as possible.

Sprinkle the dough with oil on the whole surface, sprinkle with lightly salted cheese (I used well drained cow's cheese that I salted a little, it goes well with feta, etc.). and nettles (spinach) seasoned with onions.

Recipes with nettles, leurd and other greens for Easter fasting
